Vegetable cutlet

I always have this itching to post something on Friday. It more or less has become a habit. Moreover I won't be able to peek into the blogger world over the weekend. So here I am posting something from my drafts. I am naming it throw-in-whatever-you-have cutlets. It's super easy and makes a nice snack for tea time. I badly wanted to use some minced meat. Probably next time :)

Serves - 2(yields around 14-15 cutlets)
Preparation time - 15-20minutes

All you need:
Vegetables(Carrot,beans,Potato,Peas,Capsicum) - 2cups(boiled)
Corn flour - 2tb spoons
Whole wheat flour - 2tb spoons
Egg white - 1
Ginger and garlic - 1tb spoon(minced)
Salt - 3/4 tb spoon
Green chillies - 2 finely sliced
Bread crumbs - 1 cup(Required for coating)
Oil - 2tb spoons
Lemon juice - 1 tb spoon(optional)

Procedure:
1. Boil all the vegetables till soft. Mash them all together along with salt and chillies.
2. Now add the ginger and garlic.You can add paste if you don't like biting into those tiny bits.
3. Add egg white,lemon juice,wheat flour and cornflour and combine.
4. Make patties out of the mixture and roll them in bread crumbs. Now heat some oil and shallow fry them in batches.

Now relish the cutlets sipping some hot chocolate on a perfect day this monsoon. You all, have a great weekend.

Nore:
Needless to say you can add any vegetable you like.
