Srilankan Omlette Curry

I am all excited about the events happening in the food blog world. As I take baby steps here,they help me to know the people around better. They also give me the push I need to try something new and different. When I learnt that AWED event was being conducted and the theme is Srilankan cuisine I thought this is the chance. When I did a google search and read about the cuisine, I came to know it is close to Indian cuisine yet has a charm of it's own.
Of all things/recipes I read about, omlette curry fascinated me. In a kitchen like ours where quick food is the cuisine and simple cooking is the method, eggs are present inevitably. So as a proud egg lover I present this recipe.

Ingredients:
Eggs - 3(I used only whites)
Coconut milk - 1/2 cup
turmeric powder 1/2 spoon
Coriander powder - 1/4 tp spoon
Jeera/cumin powder - 1/4 spoon
Chilli powder- 1/3 spoon
Onion - 1(chopped)
Tomato - 1(chopped)
Salt - 3/4 tb spoon
Pepper powder - 1/4 spoon
Oil - 3/4 tb spoon
Coriander - 1bunch


Procedure
1. Beat the egg whites along with 1/4 spoon turmeric powder, 1/4 spoon salt and pepper powder.
2. Heat oil in a tawa/wide pan. Make an omlette out of the beaten mixture.
3. Cut the omlette into pieces. I made 9 pieces like 3x3 squares.
4. Heat the remaining oil in a kadai/wok. Add onions and after they turn translucent, add coriander,cumin,turmeric and chilli powders.Mix them all thoroughly.
5. Add the tomatoes and salt now. Fry them for 2-3 minutes. As the oil starts to separate, add omlette pieces.
6. Stir fry them for a minute and add coconut milk. Let the contents share the essence for 1-2 minutes.Don't overcook this mixture as it might lead to curdling of coconut milk.
7. Garnish with chopped coriander.
It was quite pleasant and was perfect for our Sunday dinner. It went very well with our coconut rice.

ah , the wonderful addition of coconut milk to everything. i have fallen in love with this cuisine since the event you know!
