I am truly overwhelmed with the response I have been getting from food blogger world. So, firstly thanks everyone. I am relatively new to this place. I see people come and check what's cooking in here. I am truly delighted. And now, the recipe I am going to write down is really special for me. I remember my mom making this since as long as I can remember. I haven't eaten ridge gourd this way anywhere else. I can recollect images of mom feeding us this curry with rice at dinners. We had our dinner watching DD news at 7pm back then. Whew!times have changed.
Ok, so getting back to the recipe it is a medley of tender ridge gourd and coconut spiced up moderately.
Preparation time - 12-15minutes
Serves - 2
Ingredients:
Ridge gourd - 1(about 200 gms)
Onion - 1(medium)
Grated fresh coconut - 1/3 cup
Chana dal/Split gram dal - 2-3 tb spoons(soaked in water for 30mins)
Ginger garlic paste - 1/2 tea spoon
Green chillies - 1-2 (adjust)
Garam masala - 1/4 tb spoon
Chilli powder - 1/4 tb spoon
Oil - 3/4 tb spoon
Salt - 3/4 tb spoon(adjust)
Turmeric powder - 1/4 tb spoon
Procedure:
1. Peel the ridge gourd and chop into fine pieces.
2. Heat oil in a kadai/wok. Add onions, ginger garlic paste and green chillies and saute for 1-2 minutes.
3. Now add ridge gourd pieces along with salt and turmeric. Combine and fry for 3-4 minutes on a medium flame.
4. When ridge gourd pieces turn tender, add grated coconut and mix. Fry them for 2minutes.
5. Add soaked chanadal, chilli and garam masala powders. Stir fry them for a minute or two and serve.
Note : If you don't have enough time in hand, soak chanadal in hot water for 5-10mins.
