Guest post - Mixed vegetable stew

Yes,guest post from a non-blogger and that is my roommate. She is equally passionate about cooking. She whipped up a delicious meal one day, when I went home late from work. I really liked the way it came out and so here it is. It is super simple, seriously. It is a dish with sweet-tangy gravy and variety of vegetables stewed in it. Rest,recipe would say:


Ingredients:
Brinjal - 1-2
Tomatoes - 2(medium)
Potato - 2
onion - 1(big)
Bottle gourd - piece weighing around 150gms
Tamarind - 1 tb spoon paste
Jaggery - 1 tb spoon
salt - 3/4 tb spoon(adjust)
Turmeric powder - 1/4 spoon
Water - 3/4 cup
Coriander - for garnishing

Tempering/Tadka
Oil - 1 tb spoon
Mustard seeds - 1/4 tb spoon
Jeera - 1/4 tb spoon
Chana dal/ Bengal gram - 1/2 tb spoon
Urad dal/Split gram dal - 1/2 spoon
Curry leaves - 2 sprigs
Red chillies - 2
Methi seeds - 1 pinch

1. Heat oil in a pressure cooker. When it is hot enough, add all the ingredients mentioned in the tempering section one by one.
2. When the dals turn golden brown add chopped onions and fry them for two minutes.Add turmeric powder and chillies and mix.
3. After the onions turn translucent, add diced vegetables one by one(brinjal,bottle gourd,potato and tomato)in that order.Add salt at this point.
4. Stir fry for a minute or two. When the vegetables are half cooked add tamarind paste,jaggery powder and mix.
5. Add enough water(vegetables should look covered) to the vegetables.
6. Pressure cook these contents for 1-2 whistles. If cooking over stove top, cook till all vegetables appear cooked and there is no excess water.
7. Garnish with coriander and serve. Rice/ roti makes a good side dish.

I like the stew she makes with just drumsticks and onion. It will appear here next time she makes.
