French beans stir fry

~ Thursday, June 18, 2009

When I call mom at around 7-8pm, she assumes it would be a SOS call for a recipe. More so these days because of the food blog. First thing she would ask "What is today's vegetable?". On some auspicious days I try not to call her and cook on my own. It ofcourse comes out well because I keep it safe and simple when I use my mix and match strategy.(There are very few exceptions though!) When I share this tiny bit of happy news with mom, she says "Oh!I didn't know about this". That's it, I would be on cloud nine. This dish comes from that category. It asks for basic ingredients and not a bit of grinding/pounding.It is simple and makes a good side dish with rasam/sambar.

Serves - 2
Preparation time 10-15min

Ingredients:
Beans - 200gms
Salt - 3/4 tb spoon(adjust)
Water - 1 cupOil - 1/2 tb spoon
Chilli powder - 1/3 tb spoon
Sambar powder - 1/3 tb spoon
Procedure:
1. Chop beans finely.
Cook them in just enough water and 1/2 tb spoon salt over stove top for about 7-8 minutes.(I don't pressure cook them for the fear of them turning mushy)
2. Drain the excess water(if any) and keep them aside.
3. Heat oil in a pan. Add beans to the oil and stir fry for about 4-5 minutes.
4. Now add chilli powder and remaining salt and fry for a minute.5. Now add sambar powder and mix it. Switch off the flame and serve it. Tadaan!

This is very suitable for week day dinner when you don't have much time in hand.
