Coconut rice

I overcame the fear of using coconut in my dishes.(As I told you already, I don't use frozen coconut and couldn't really break, grate and all) It started and it started with a bang. I made coconut rice which is like the simplest recipe so far. Coconut rice to me was rice cooked in coconut milk. This rice is pleasant yet not bland. This is just so nice. I loved the way it came out and can't wait to share with you all.
Serves - 2
Preparation time - 10-12 minutes
Ingredients:
Coconut - grated 1 cup(Fresh)
Rice - 3/4 cup(Any variety would do)
Green chillies - 2
Ghee - 1 spoon
Chana dal/Bengal gram dal - 3/4 spoon
Urad dal/Split gram dal - 3/4 spoon
Jeera /Cumin - 1/2 spoon
Red chillies - 2
Asafoetida - 1 pinch
Mustard seeds - 1/2 spoon
Curry leaves - 2-3 sprigs
Peanuts(optional) - 3-4 tb spoons
Water - 1 and 1/2 cup
Salt - 1 spoon
Procedure:
1. Chop the coconut into pieces and grind into a coarse paste. Alternatively, grate the coconut.Add salt to this mixture and mix thoroughly.
1. Cook the rice till done. It shouldn't be very sticky neither should it be totally separate. Medium texture desired. I used 1:2 ratio of rice to water and pressure cooked for 3 whistles.
3. Add grated/ground coconut to this rice when it is still hot.(Rice should be hot when You add coconut)
4. Heat ghee in a pan. Add mustard seeds,dals and then jeera,chillies,curry leaves and asafoetida one by one.Add green chillies and fry for a minute.
4. Add the tempering to the rice with coconut. That is it,done.
