Plantain stir fry

By the time I realised it is time I made something out of the lone plantain,it started turning ripe. Then I thought it should be stir fried with some twist. The twist came in the form of slightly fried onions ground with green chillies. I used a generous amount of curry leaves. I have a feeling plantain very well goes with curry leaves essence. We liked it, hope you like it too :) Here we have the recipe
Ingredients:
Banana - 1
Onion - 1 big
Green chillies - 2-3 (adjust to your spice level)
Turmeric powder - 1/4 spoon
Salt - 1/2 spoon(adjust)
Water - 1/4 cup
Chilli powder - 1/4 spoon(optional) Seasoning/tadka
Oil - 1 spoon
Mustard seeds - 1/4 spoon
Red chillies - 2
curry leaves - 2 sprigs

Procedure:
1. Heat about 1/3 tb spoon oil in a wok. Add jeera/cumin,onions and green chillies to it. Fry them till onions stop smelling raw like for about 2 minutes.
2. Remove the contents and let them cool. Grind them into a coarse paste along with the salt.
3. Add the remaining oil. When it is piping hot, add msutard seeds and when they start to pop,add red chillies and curry leaves.
4. Add banana peeled and chopped to this tempering. Add turmeric powder and toss them for a while.
5. After banana looks half fried(takes around 2-3 mins),add the ground mixture and let them all blend together.(If you are a person like me demanding more spice,add the chilli powder at this point)
6. Fry this mixture till banana is done by stirring(3-4 minutes).Sprinkle water if necessary.


Enjoy it as a side dish with rice. If u want to have with roti,add more water for gooey texture.
