Carrot coriander chutney

Carrot,carrot how do you want to be eaten?
Carrot: I want people to try variety of dishes with me. I am beautiful and talented. So I hope people make good use of me. I always end up being eaten raw :(
This is true, atleast in my kutti kitchen till sometime back. I was using carrot mostly in salads. Then considering it's potential nutrients started using in upma, noodles , omlette and all dishes possible. I wanted to try something without grated coconut, again.(No, I don't have anything against coconut. I just find the process little tedious) So, carrot chutney happened.
Carrot chutney has carrot has the main ingredient but what enhances it's taste is the coriander. When you are in a hurry, you find bunch of coriander leaves on the verge of wilting and carrots which are almost there, you know what to do, right?
Ingredients:
Carrot - 2
Urad dal/split gram dal - 1 spoon
Chana dal/bengal gram dal - 1 spoon
Jeera/cumin - 1/2 spoon
Tamarind paste - 1/2 spoon
Coriander - 1 bunch
Salt - 1/2 spoon(adjust)
Red chillies - 2
Oil 3/4 spoon
Water - 3-4 spoons
Procedure:
1. Heat oil in a wide pan. Add dals, red chillies and jeera. Once dals turn golden brown, add carrot.
2. Fry the contents for 3-4 minutes. Add tamarind to this and fry for few seconds.
3. After the above mixture cools, blend/grind them along with salt and chopped coriander.
4. Add seasoning if desired. We had it without seasoning, it still tasted good.
Good way to include carrots in diet and very quick as you can see. Though it doesn't have a very appealing look, it does taste great. Trust me.
