Beetroot fry

I got a beet root for the first time and I was all excited to make something delicious out of it. When I googled, not many recipes were pointing at that vegetable. All those I found were asking me to use coconut which I am not very keen doing. I finally thought I will use my mix and match strategy and make something edible. And to my utter surprise it was more than edible, it was yummy. Perfect when you don't have coconut or anything for that matter in your pantry.
Here, I have a confession to make. I am slightly obsessed with health and health related cooking. Okay, slightly I said. I used roasted sesame and peanut powder to make it tastier and healthier *blink*. This is variation to monotonous beet root fries and we loved its taste. It's simple and pleasing!
Serves - 2
Preparation time - 15-20 mins
Beet root - 1(would have weighed 250gms)
Onion - 1
Green chillies - 1(finely chopped)
Water - 1/4 cup
Turmeric powder - 1/4 spoon
Oil - 1 spoon
mustard seeds - 1/4 spoon
Curry leaves - 1 sprig
To be ground to a fine powder
Roasted sesame seeds - 1 spoon
Roasted peanuts - 2 spoons
1. Roast the sesame seeds and peanuts separately. Powder them finely and set aside.
2.Chop the beetroot pieces into chunks. Cook these pieces for about 1-2 whistles in a pressure cooker. Don't over cook them.
3. Once the cooked beet root pieces are cooled, chop them into small pieces.
4. Heat oil in a pan. Add mustard seeds and once they start to splutter add curry leaves. Then add onions,green chillies and turmeric powder.
5. Fry onions for about 3 minutes on sim. Once they start browning,add the beet root pieces.
6. Fry them all together by stirring in between for about 2-3 minutes.
7. Now add the ground sesame and peanut powder . Mix them carefully so that all the pieces are evenly coated with the powder. Fry them for a minute and turn off the flame.
It makes a good side dish with dal/rasam and goes well with rotis too.
